Funayuki 170x50mm, San-maï blade V-Toku 2 tungsten steel core and suminagashi cladding (Wrought iron and 15n20)
Small Santoku with thin edge but robust spine. Distal taper from 4mm at the handle to 2.2 mm mid blade to 0.9mm at the tip. Core harden at 63-64HRC. Please note that, there is a small delamination within the wrought on the emoto (near handle) and on the spine mid blade (See last photos). This won't affect the performance of the knife
Kurouchi blade, flat double bevel with Kasumi polish.

Wa handle made from Bog Oak (5500 year old) ferrule and burl english oak 145mm length.
Overall length : 320mm
Saya is included and made from ebonised sweet Chesnut with pin to secure the blade.

My blades are made from carbon steel not stainless steel, it gives my knives an unbeatable sharpness. I prefer carbon steel for it ease to sharpen, the fine edge it takes and the beautiful patina that will develop. You do, however, need to give carbon steel knives just a little extra care to keep them in top shape. There are trade-offs in everything.
The knife is polished using whetstones. It will be easier for your to maintain it or to improve my work.
