Nashiji : San-Maï (3 layers) / 26C3 or 135Cr3 core with soft steel cladding. Clean Kurouchi with satin finish.

This is my most affordable range of knives. I still focus on the performance but use more cheaper materials to keep the price as low as possible. I refined my process to work quickly with standard stock. No compromise on heat treatment, forge and grind precision. They come with a satin blasted finish and a clean Kurouchi.

Kira : San-Maï (3 layers) / 26C3 or 135Cr3 core with soft steel cladding. Scratched hira with satin finish. 

 This range have a very clean and minimal feel to it. It's still the same focus on performance, geometry and heat treatment. It's only possible to do it on soft steel cladding. The hira is scratched then etched to create a really dark surface. The bevels are sand blasted for a satin finish.

Totsu : San-Maï (3 layers) / 26C3 or 135Cr3 core with soft steel cladding. Full convex with satin finish. 

This range have a very clean feel to it with the best of food penetration in mind. It's still the same focus on performance, geometry and heat treatment. The hira is fully ground to give a convexity where the thickest point is in the middle blade. The spine is actually thinner than the middle of the blade to increase food release. The bevels are sand blasted for a satin finish.

This range is for easy maintenance. The stainless steel cladding offer a great protection against rust and oxydation while still using high carbon steel core for cutting performance. The best of both world. They come with a satin blasted finish and a dark Kurouchi

Tetsu : San-maï (3 layers) / Shirogami 1 or V-Toku 2 core with wrought iron cladding. Dark Kurouchi with kasumi finish.

The Tetsu range is for wabi-sabi lover and stone polisher. The cladding is made using vintage wrought iron cladding that I collect, process and forge weld to a premium high carbon steel core. I grind all the bevel on water cooled grinding wheel and finish them on natural Japanese stone for easy maintenance.

Suminagashi : San-maï (3 layers) / Shirogami 1 or V-Toku 2 core with suminagashi (Soft and hard layers) cladding. Dark Kurouchi with kasumi finish.

The suminagashi range offer the best between contrasting intricate layers of fire welded iron and steel with the uniqueness of an artisan knife. For the core of the blade I use premium steel to enhance the cutting performance. Bevel are polished on natural Japanese stones to reveal all the details of the forge work.

Kireha finish (bevel) :

Mastering polishing on natural stones take years and a lot of hours but I try to offer the best finish that I can. I use a selection of synthetic stones, high quality sand paper and Japanese natural stones to finish the kireha.

Hira finish (blade) :

I spent years developing different finish that enhance the knife performance, maintenance and aesthetics. I use several techniques to remove or add layers onto the steel.

I only use European wood with very few exceptions. English Oak, Bog Oak, Walnut, Maple, Elm and Box wood are my favorite. They are strong et durable, perfect for kitchen knives.
